Thursday Night Dinner: Mint-Chocolate Whoopie Pies & Last Minute DIY Gifts

Tonight's Thursday Night Dinner is in Hoosier land. Yup! I'm back in Indiana with my family and this trip was especially needed because I am sick.  Sick as a dog.  And there is nothing like being at home with your mom when you are sick.  My darling baby sister met me at the airport with Aspirin and bottled water ready to go.  She even carried my suitcase for me (which is no small feat considering the number of shoes I typically pack).  On my first evening back my mom made me chicken noodle soup from scratch.  It is definitely one of those dishes that is chock-full of memories (mostly of my sisters and I huddled around the kitchen table with runny noses).  It is comfort food at it's best.  I especially like it with slices of a buttered French baguette.  Since I have strep, this time I let the bread soak into the soup for a bit and it was just the ticket to making this sick girl a little less gloomy.  I'll be having this for dinner again tonight, so I thought that I would share this delicious recipe with all of you.  For dessert I have something that will make all of you chocolate lovers (Shoko) swoon! My sister's good friend, Courtney, brought these into my mom's office over Thanksgiving and they are d.e.l.i.s.h. and so perfectly Christmasey! I told her that she must email the recipe over so that I can post it on Thursdays and so today I am sharing it with all of you!

What you need: 

For the pies:

  • 4 cups all-purpose flour
  • 1 1/4 cups unsweetened cocoa powder
  • 3 teaspoons instant espresso coffee powder
  • 1/2 teaspoon salt
  • 1 1/2 cups of butter, softened
  • 1 1/2 cups sugar
  • 2 eggs

For the filling: 

  • 1 cup butter, softened 
  • 1 tsp vanilla extract
  • 2 tsp peppermint extract
  • 5 cups confectioners sugar, divided into two equal parts
  • 3 tbsp milk

What to do:

For the pies: 

Preheat oven to 350 degrees.  Line cookie sheet with parchment paper.  In a medium sized mixing bowl, stir flour, cocoa powder, espresso poser, and salt (set aside).  In a large mixing bowl, beat butter with an electric mixer on med-high for 30 seconds.  Beat in sugar until combined and then beat in eggs until combined.  Cover dough with plastic wrap and chill for about 15 minutes (or until dough is easy to handle).  Roll small dough balls (about 1 tbs) and flatten them like little pancakes so that the are about 1/4" thick.  Place onto parchment covered cookie sheet and bake for 8-10 minutes (or until edges are firm).


For the filling: 

While the pies are baking, make the filling! In a medium sized mixing bowl beat butter with electric mixer until fluffy.  Add vanilla and peppermint extracts.  Beat in 2 1/2 cups powdered sugar, milk, and then add the remaining confectioners sugar.  


Let the pies cool for approximately 15 minutes then spread filling between two pies.  Serve and enjoy! 

Warm Your Heart Chicken Noodle Soup

What you need: 

  • 2 cups roasted chicken, chopped
  • 2 ½ cups potato, diced
  • 1 medium sized onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup baby bella mushrooms, sliced
  • 1 garlic clove, minced
  • 3 tbsp flour
  • 2 tsp olive oil
  • 1 12 oz can evaporated milk
  • 3 14 ½ oz cans chicken broth
  • 2 cups macaroni noodles
  • ½ tsp oregano
  • ¼ tsp thyme
  • ¼ tsp paprika
  • ¼ tsp cumin
  • ½ tsp salt

What to do:

In a large soup pot, heat olive oil over medium heat.  Add onion, carrots, celery, and garlic and sauté for about five minutes.  Next add flour, mushrooms, oregano, dried thyme, paprika, and cumin and sauté for two minutes.  Add broth, potatoes, and salt.  Bring mixture to boil, lower heat, cover and simmer for 30 minutes, or until potatoes are softened 

Next add the chicken, milk, and noodles.  Cook for another ten minutes or until noodles are tender.  Serve right away with your broken hearted gal’s favorite drink.

Veggie option:

Trade in vegetable stock for the chicken stock and leave out the chicken.
