I have never been really into hearty leafy greens, but over the last few years I have developed a bit of a crush on them. They add such a richness to the plate in color, taste, and in nutrients that I have a hard time going without them now. My new favorite way to serve them up is as chips. Yes folks, chips! We make these all of the time at our Thursday Night Dinners because they take about 15 minutes and make such a tasty snack while we prepare dinner. Give them a shot at your next dinner party or even sneak them into your kid's lunch! I'll bet they will never know what hit them.

What you need:
- 1 bunch of kale, roughly chopped
- 2 tbsp olive oil
- 2 garlic cloves, minced
- salt and pepper to taste
What to do:
Preheat oven to 375 degrees. Lay chopped kale onto cookie sheet and toss with olive oil, garlic, salt, and pepper. Bake for 15 minutes. Enjoy!
