Thursday Night Dinner: Sprouts and Wedding Decor

DFirst things first, meet D, the newest member of the Louisville Thursday Night Dinner crew. Kate rescued her a couple of weeks ago, and I can't get over the kitten hair coming out of her ears. Last week we discovered that D loves crafting, especially getting inside your crafting box and chewing on it. So cute.

Anyway, this week has been really, really hot, so we're going super low-key for dinner-- just some simple Brussels sprouts and a sauteed veggie burger on the side. If you want to get fancy with the veggie burgers, see our F the Meat, I Want a Veggie Burger recipe, but we're going the frozen route tonight. And if you're of the meat eating variety, by all means, have a real burger!

Also, we don't want to spend too much time cooking because I need my girls to spend their time making 150 of these flag name cards for the wedding that you see below. What are friends for if not to help you do your busy work?? A tutorial on the flags will follow soon!

 Brussels Sprouts with Brown Sugar and Walnuts

What you need:brussels_sprouts-6178

  • 1 bag frozen Brussels sprouts, thawed (usually about 12 oz)
  • 2 tablespoons olive oil
  • ¼ small red onion, diced
  • 2 tablespoons brown sugar
  • ¼ cup crushed walnuts

What to do:

Thaw brussels sprouts (I usually place mine in a small bowl with a touch of water and microwave for 30 seconds. Stir, and microwave for another 30 seconds). While sprouts are thawing, heat olive oil in a medium sized skillet over medium-low heat. Add onions to heated oil and sauté until they are clear. Once thawed, cut sprouts in half. Add sprouts; sauté on one side about 2 ½ minutes. Add brown sugar and turn heat to medium.  Flip sprouts and sauté another 2 ½ minutes. Add walnuts and stir occasionally for another 5 minutes. Remove from skillet and serve.

Serves about 4 as a side dish.
