Could it be... Healthy Ice Cream?

Spinach and dessert aren't two words that usually go together- at least not in my book. Spinach and ice cream… even less likely to cross my mind as a palate pleaser. However, ice cream is one of my biggest weaknesses. I could eat it every day for the rest of my life and never get tired of it. On top of my love for this sinful snack, it is simply impossible for me to eat just a scoop- you know, that little thing called moderation. It’s a problem really, so when I came across this recipe via Chocolate Covered Katie, I knew I had to try it! Verdict; definitely something I will try again! I really is good! Okay, so it isn't exactly the same as digging into a pint of Ben and Jerry's covered in peanut butter sauce and hot fudge, but it is enough to leave me feeling like I just ate a yummy bowl of ice cream. And, it's actually healthy- a great way to sneak in a few leafy greens and get a little extra potassium. So give it a whirl; I think you'll be surprised by how good it really is!
Spinach Ice Cream

What you need:
- 2 very ripe frozen bananas
- 2-3 drops peppermint extract
- 1/16th tsp salt
- 1/4 cup frozen spinach (you can use more if you want to)
- 2 tbs almond milk
- about a tbs chocolate chip, plus a few chopped to sprinkle on top
What you do:
Blend all of the ingredients in a high powered blender. I put mine into the freezer for about an hour to make it seem like more legit ice cream. Then scoop, add a few chopped chocolate chips and enjoy!
