Siesta Salsa

  • 1 can (11 oz) whole kernel corn, drained
  • 1 ½ cups diced roma tomatoes
  • ¾ cup diced medium red onion
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp jalapeno pepper, minced
  • 1 tsp cilantro, finely chopped
  • 1 avocado, peeled, pitted and diced
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp salt
Note:If you like your salsa less spicy, use just one tablespoon of jalapenos.

What to do:

Mix the first six ingredients together with a wooden spoon in a medium sized mixing bowl. Next, gently fold in the remaining ingredients; and believe it or not, your Siesta Salsa is ready to eat!
